Don’t send anything that’s even remotely going to go bad in two days. Make sure your packing isn’t squishing the bags in the box, dry ice is heavy and place right on top. Some bags have been wet and fall apart taking them out of the box. But most importantly, make sure you send the right stuff and prep menus . It all has to work or it doesn’t.
